With regards to the question of dropping vs. rolling, as long as you don't look at the dice before hand, both are equally random. It is true that if the dice roll along the ground, then the axis on which they roll makes a difference. But as long as the roller does not know which axis each die will roll along when he rolls it, this makes absolutely no difference; the roll is still random, and therefore fair. Randomness is based upon uncertainty regarding the outcome of a particular event. Even if the probabilities of each outcome are changed when a player rolls a die, as long as he doesn't know how they are changed, it is still completely random, and therefore fair.
In other words, as long as you don't examine the dice before you randomize them, it makes absolutely no difference whether you roll them, drop them, or send them through a food processor.
