Some were, some weren't. I particularly enjoyed First Class and Days of Future Past, personally.
C3G can be played with official Heroscape, but it's not recommended.

I wanted Apocalypse to be good. I still enjoyed it, but it could/should have been better.

I agree that Apocalypse is the big red mark on this version of the X-Men. I also liked First Class and Days of Future Past. I think Dark Phoenix's biggest issue is a) we know Disney now owns them and b) they are going to get a reboot. That combined with the much better quality of Endgame and Far from Home (which bookend around it) make it something people are indifferent to.

X1 is "good" as a classic early 2000s superhero flick. I wouldn't exactly call it a classic of cinema, but it's so indicative of that era of capefilms and was really a pioneer movie for the time.
First Class is a solid prequel, especially if you like the Xavier/Magneto dynamic. DoFP really feels like the definitive X-Men movie as of right now. Logan is a masterpiece. |

I really enjoyed the original trilogy (Including 3, actually. I know it wasn't comic accurate, but for the world they created, it fit very well), and Logan, yes, was a masterpiece.
I never really got into the newer films. I've seen them all (Not Phoenix yet), but they all felt bland to me. Good moment, cool characters, but I just can't find myself caring. It's really weird. Apocalypse needed more lead up for such a huge villain. Deadpool I don't even really count as "Xmen" films. They're fantastic though. |

Logan is phenomenal. It stands apart from other superhero movies in general.
Days of Future Past is one of my favorites. The newer X-Men series is quite enjoyable. Like Superheroes and Comics?

I liked the Dark Phoenix movie, although could have been better. I also liked X-men 3 but thought neither of them did justice to Dark Phoenix saga. The rendition I most remember and will most likely forever think is the best (until the Disney one comes around in 15 or so years) is from the X-Men Animated Series:

Yeah, that was a good series.
I have to say, though... I remember watching the Dark Phoenix Saga there and thinking how moving it would have been if the series had given me any reason to actually care about Jean as a character up to that point. She was utterly soporific and about as one dimensionally boring and 'good' as a Dickens heroine. They did such a good job in those episodes, and some of the lines would have worked so well... if they'd put any effort into making me care about her beforehand... Instead I found myself just wishing they'd leave her dead. Less narrative baggage. |
