Yeah, it's the 2000-2009 run before it switches to Ultimate Spider-Man Vol. 2 (2009-2011), which ran for 15 issues before switching back to the original numbering in 2011. 11 issues later, it was replaced by Ultimate Comics: Spider-Man, which follows Miles Morales. UC:S-M lasted 28 issues before being cancelled in time for the Cataclysm event. Following Cataclysm, Miles came back in Miles Morales: Ultimate Spider-Man but only for 12 issues before Secret Wars ended the Ultimate Universe. Miles then got moved over to the 'main' 616 universe to star in Spider-Man. Confused yet?

To answer your questions, start with the 2000-2009 series. It's a reboot of Spider-Man, so it starts from his origins and is one long story. As far as rating, it's a book aimed at teens. Language is minor (hell and damn is probably the worst of it, and not very common), though there are plenty of grawlixes. There's plenty of teen romance in the book, but nothing above a light PG-13 rating.
The first few collections are actually rated A "all ages" and as much as my son loves Spider-Man and he's really getting into comic right now...Free Comic Book Day three years in a row and he's hooked. Plus he has the entire Tiny Titan trade collection which even at almost 9 he still enjoys as well as a few of the All ages Young Justice series. I'll probably look into picking up a couple of the Ultimate Collections which are about 13-14 issues each.

Would I want it to be everything I love...sure...but that's just not realistic so I'm going to focus on finding things that will make me unhappy and work on fixing those.

I find the whole comics universe to be overwhelmingly confusing. How does one find a list of all the Ultimates comics to know which one to read to make it be chronological? Then there are about a bazillion different versions of everything. Marvel Unlimited doesn't really help, it just presents you with a MASSIVE list of comics, so large that you really can't browse and find something. Does anyone know of a comics primer or something that explains all of this?

Try Judge Dredd. Simply start with issue #1 and keep reading until you catch up to the current issue. One continuous story. No re-boots or alternate versions(unless you count the new IDW version).

If you're looking for some Marvel recommendations, let me know. I've been taking advantage of Marvel Unlimited for a while and I should be able to give you a good starting point for most characters.

Mark Waid and Mike Wieringo's Fantastic Four run is a personal favorite. Starts here in Marvel Unlimited, first trade is here on Amazon and here on InStockTrades. It's about 35 issues, collected in 4 trade paperbacks.

That run is probably the best modern take on the characters. A lot of people really like Hickman's run as well, but I think Waid's is a little friendlier.

Grant Morrison's 1 2 3 4 mini is also really good. Very weird (it is Grant Morrison, after all), but good. It's here on InStockTrades and here in Marvel Unlimited.

It's pretty rare for me to dislike Waid's take on a character, so his Flash is definitely on my to-read list (especially since the show has me hungry for Flash stuff). A friend of mine went through it lately and loved it.

Yeah Wally Flash had a couple of decent stories with Johns after Waid left, but it was never really the same. Terminal Velocity through Chain Lighting were where that book really hit the sweet spot for me (crossover warning on some of those btw). I believe Chain Lightning was the end of Waid's run.

*Sadly, not this C3G, but Cyanidin-3-glucoside, something found in black rice that may help reduce appetite. But a guy can dream, can't he?
