For Bloodsport, I think it'd be more effective if the trigger for him to get the Assassin class was based off something in your army, like having a Lex. Having his class change happen based on what the enemy's army looks like means building him around Assassin synergies will be super counter-drafty. I'd really only want to do it in a themed game scenario.
For Shao Kahn, we have definitely been working on building up Enforcer as the "fighting game bad guy mooks" class, so giving him a callout to that would be cool and get him playing with the right set of figures.
