Two boxes of each set are extremely useful. Though its less useful buying more if you don't play with more than one other person regularly.
For example, since the inclusion of of dual colored planeswalkers, if one person plays chandra and the other arlinn, then two sets are required for full selection potential of spells and creatures for each planeswalker. Otherwise its time to draft. Which is ok... but hardly ideal. Especially when the second set can be had for $10.
So two boxes of each set has a very valid use.
