I just want to make sure I'm reading this right. Giant Swat can't affect flying creatures if they fly over/around Giant-Man, right? Because they never "enter engagement" with Giant-Man. If you "land" right next to Giant-Man, you can then be hit by Giant Swat, I believe?

Correct. Until a flying figure lands, they're not technically adjacent/engaged to anyone.
